I really liked the pies. The pies are made in a hurry, with any fillings - sweet, salty. The dough is yeast-free, soda-based, without eggs. They will delight both guests and household members.

Quick pies made from Lenten dough

2 cups flour
3 tbsp. spoons of sunflower oil
water
0.5 tsp salt

Preparation:

Pour the mixture of water and oil into a bowl for kneading the dough, add salt and soda and beat into a suspension (you can do it by hand so that the soda and salt dissolve).

I still can’t understand what soda is doing here, there is no acid, therefore no gas is released, but for some reason the dough still becomes looser and softer, and the pies increase in size, so my addition significantly changed the condition of the pies.

Add flour and knead the dough. It turns out to be very plastic, it doesn’t stick to your hands or dishes, it’s even easy to make pies, the flour for rolling out is purely symbolic.

Roll the dough into a sausage and cut into pieces. Usually this amount of dough makes 12-15 pies.

I put grated apple mixed with sugar in the filling. It is clear that any filling for pies is suitable here: from sweet to salty, both lean and fast.

Only if you put jam, sprinkle it with starch, then the filling will not leak out. And one more thing: you need to carefully fasten the seam of the pie so that it does not unravel during frying.

Fry the pies in a frying pan, first on one side until browned.

Turn over to the other side, reduce the heat slightly and hold the pies under the lid until they finish cooking.

The finished pies are very soft and tasty, they don’t go stale for several days, if they sit for a long time, of course.

sour cream – 250 gr
margarine (or butter) – 125 g
flour –200-250 gr

Preparation:

Melt the margarine over low heat. Remove from heat, add sour cream, salt and sugar.
Add half a teaspoon of baking soda to 1 table. a spoonful of boiling water (it turns out that soda can be extinguished not only with vinegar, but also with boiling water). Stir until foam forms.
Add the slaked soda to the rest of the ingredients, add the sifted flour and knead the elastic dough.
Divide the dough into 16 parts and, adding filling, make pies.

Preparation:
Add salt, yeast and sugar to a bowl of heated water. Stir until the yeast is completely dissolved in the water. Add the yeast to the flour and pour in vegetable oil. Knead the dough and leave it for 1 hour in a warm place to rise. When it rises, knead it and repeat this procedure again. The dough is ready. Form it into products and bake.

Yeast dough with vodka

Ingredients:
4 stacks flour,
1.5 stack. water,
2 tbsp. vodka,
2 tbsp. vegetable oil,
100 g melted lean margarine,
1 tsp Sahara,
1 tsp salt,
1 packet of dry yeast.

Preparation:
Pour water and vodka into the sifted flour, then vegetable oil and melted margarine, add salt, sugar and yeast. Knead a thin dough and leave it warm. To prepare chebureks, the dough must stand in a warm place for 1 hour, and to prepare pizza it will take 3 hours.

Yeast choux pastry

Ingredients:
1 kg flour,
3 stacks water,
1.5 stack. Sahara,
150 g vegetable oil,
100 g lean margarine,
100 g regular yeast (or 1 sachet of dry),
salt - to taste.

Preparation:
First, boil water with sugar, salt and vegetable oil. Cool to the temperature of fresh milk and add margarine and yeast. Gradually adding sifted flour, knead a thin dough. It is advisable to knead the dough for at least 30-45 minutes. Then put the dough in the refrigerator for 3 hours. This dough can be used to bake unfilled buns, sprinkled with sugar, cinnamon, vanilla and cocoa, and buns with sweet and savory fillings. If the filling is supposed to be unsweetened, add less sugar to the dough.

Yeast cold dough for chebureks

Ingredients:
1 kg flour,
300 ml cold water,
1 tsp. Sahara,
1 packet of dry yeast,
a pinch of salt.

Preparation:
Add yeast, salt, sugar, water to the flour and knead the dough as thick as dumplings. Cover the finished dough and place it in the refrigerator. You can start preparing chebureks after 2-3 hours, but it is better to let the dough sit in the refrigerator overnight. This dough can be stored in the refrigerator for several days (it will make it even better), so you can take some of it and save the rest for later.

Puff pastry yeast dough

Ingredients: the same as in recipe No. 1.

Preparation:
Prepare the yeast dough, knead it thoroughly and leave it warm for 1-1.5 hours. When the dough has risen, knead it once, then again. Roll out the resulting dough into a very thin layer, brush with vegetable oil, sprinkle with sugar and fold into an envelope. Repeat these steps 4 times. Sprinkle the dough with flour. Ingredients:
900 g flour,

Preparation:

Before baking, the products should be allowed to rest on the baking sheet until they have almost doubled in volume. After baking, grease the warm pies with vegetable oil.

Yeast dough for savory baking (recipe from Richard Bertinet)

Ingredients:
500 g wheat flour,
320 ml water,
20 g semolina,
50 g olive oil,
15 g fresh compressed yeast,
1 tsp salt.

Preparation:
Mix flour with semolina and sift into a deep bowl. Using your fingertips, rub the yeast into the semolina flour until fine crumbs form. Then add olive (vegetable oil), salt, and warm water. Knead the dough with a bench scraper, then turn it out onto a work surface and knead until smooth. Try not to add flour; excess flour will make the product dense and heavy. Soon the dough will be saturated with oxygen and will stop sticking to your hands. Roll the finished dough into a ball and place in a warm place for 1 hour to rise.

Potato yeast dough

100 g potatoes,

Sift the flour and pour warm water into it. Add salt and oil. Knead the dough. Cover it with a towel and place it in a warm place for 15 minutes. Then roll out with a rolling pin, cover and leave for another 15 minutes. The dough is ready.

Choux yeast-free dough
The dough got its name due to an unusual method of preparation.
This type of dough is perfectly molded, rolled out and cooked. With its help you can prepare not only wonderful Lenten pies and pies, but also dumplings. 1 tbsp. vegetable oil,
a pinch of salt
a pinch of sugar
a pinch of soda,
flour - at your discretion.

Preparation:
Pour a glass of cold water into a bowl, add butter, sugar, salt, soda. Gradually add flour and mix first with a spoon and then with your hand until such a consistency that the dough does not stretch when trying to separate a small part, but immediately separates into a piece. When preparing the dough, a different amount of flour is used each time; this depends, first of all, on the stickiness of the flour. Roll the finished dough into a ball, cover with a warm bowl and leave for 30 minutes. As time passes, the dough will become more elastic.

Lenten shortbread dough
This version of lean dough can be used for sweet or savory baked goods or as a base for savory baked goods. open pies. If you add vanilla, orange or lemon zest to the dough, then this dough makes excellent cookies. The finished cookies will need to be sprinkled with powdered sugar on top.

Pumpkin lean dough
This bright, amazing dough is perfect for lean steamed pies or dumplings. The taste of pumpkin is practically not felt in the dough, although it acquires a slight sweetness. But this only adds a touch of piquancy to the finished dish.

Ingredients:
400 g wheat flour,
300 g pumpkin puree,
½ tsp. salt.

Preparation:

Lenten pies with peas

The dough for fried pies according to this recipe is only suitable for deep-frying baked goods in a frying pan. Instead of peas, put potatoes with onions or mushrooms, liver or stewed cabbage inside.

  2. Pea puree is made from pre-boiled peas. They try to get a mass of homogeneous consistency without hard lumps. The onion is peeled, finely chopped and fried in vegetable oil until golden brown. Add fried onions, ground black pepper and salt to taste to the pea puree.
  3. The dough is divided into pieces, balls are formed, and round cakes are rolled out. Place the filling on each flatbread, pinch the pie, and, having flattened it a little with your hand, roll it over it with a rolling pin. The result should be a thin pie (about 1 centimeter thick).
  4. Pour a sufficient amount of vegetable oil into the frying pan. When it warms up, place the pies in it and fry until done on both sides. Place the finished pies on a large dish and cover with a lid so that they remain soft for a long time.

Placinda with cabbage

This is Moldovan national dish. Traditionally, the dough is rolled out very thin. Placinda is baked in the oven and in a frying pan. A variety of fillings are added: pumpkin, cottage cheese, feta cheese, potatoes, berries and fruits. This recipe is a little different from the traditional one. The finished baked goods have the shape of a cheburek, and the dough does not roll out thinly. But it turns out delicious.

Hot, just boiling water is combined with sifted flour and the dough is quickly kneaded with a spoon. Add flour to the board as needed and knead the dough until elastic.
  3. Divide the soft elastic dough into pieces the size of a small egg and roll them into round cakes using a rolling pin. The filling is placed on one side of the flatbread, as in chebureks, the pie is made in the shape of a crescent and the edges are pinched.
  4. Fry the placindas in a frying pan in vegetable oil under a closed lid. The raw cabbage in the filling should steam and become softer. Therefore, the frying time on both sides is about 10 minutes over low heat. The rosy pies are ready!

Lenten dough with rice water

The dough is prepared by adding rice and soy sauce instead of water. It does not go stale for a long time and is perfect for pies. The recipe contains whole grain flour, you can omit it and bake only with wheat flour.

Cooking recipe

  1. Sort out the rice and rinse under running water. Boil half a liter of water and add rice. Cook under a closed lid over low heat until done for about half an hour. The finished broth in the amount of one glass is poured into a bowl and cooled to 40 degrees. In this dish we only need broth; rice can be used to make meatballs or something else.
  2. The flour is sifted, mixed with sugar, salt, garlic powder and dry yeast. Rice water is poured into flour, 4 tablespoons of vegetable oil are added and a soft elastic dough is kneaded. Having formed a ball from the dough, cover it with a clean towel and leave it in a warm place for 2 hours.
  3. For the filling, sun-dried tomatoes are finely chopped and mixed with dried onions. You can replace dry onion with regular onion (about 145 g). The onions for the filling should be finely chopped and fried until golden brown in a small amount of oil.
  4. When the dough has risen, divide it into parts (you should get about ten). Each part is rolled out with a rolling pin. Place the prepared filling in the middle, fold the dough in half, then in half again and roll it into a ball, first pinching the edges.
  5. Place the buns with onions on a baking sheet greased with vegetable oil and place in a warm place for 20 minutes to rise. The oven is turned on at 180 degrees. After 20 minutes, grease the enlarged buns with a spoon of vegetable oil and sprinkle with dried green onions. Bake in the oven for half an hour.
  6. The finished buns can also be greased with a little vegetable oil to make them look appetizing. Ready-made pastries can be served instead of bread for first courses.

Lenten drowned people
